Andouille Sausage
- Fried on High
- 1 package Andouille Sausage
- 1 Onion Chopped
- Olive Oil
Bacon Fried Chicken Breast
- 2 Cooked Chicken Breasts
- Sliced
- 2 Tablespoons Bacon Grease
Bacon Fried Scrap Fish
- 1.2 lbs Cod
- I seriously would have been happy with anything...
- Catfish
- Sardines
- Anything
- Bacon Grease
- The remains from a Package of Bacon.
- That which was not used for the Chicken.
- 5 Cloves Fresh Garlic
- Sizes will, of course, vary,
- Spiced
-
As if I was going to eat The Fish as a main course, by itself.
- Black Pepper
- Red Pepper
- Thyme
- Oregano
- Italian Parsley
Simmer The Lot
- 1 can Diced Spiced Tomatoes
- Into the Big Pot,
- Which I shall now start to simmer.
- 2 Cups Water
Bell Peppers
- 3 Green Onions
- Mainly, because I was waiting to find out which Peppers to use and I got bored.
- ½ Red Pepper
- 1 Green Pepper
Bacon Fried Rice
- Water
- I filled the Frying Pan ¾ of the way up.
- Lots of Bacon Fat remains.
- Rice
- About a third as much Rice as there's water, right?
- Truthfully, it's hard to tell.
- That Water is murky.
- 3 small handfuls Frozen Peas
- 3 small handfuls Frozen Corn
- These last two are just to liven it up a bit.
- Shrimp!
- I forgot the shrimp!
- So, I'll be adding:
- 20 Medium Shrimp
At some point, I'll take the shrimp out, reduce the Water, and add some Egg Yolks that have been lying around. But that comes in an hour or so.
Oh, the only reason I am cooking the Shrimp in with the Rice Water is that the rest is never going to get Boiling Hot, again... just the occasional simmer.
Served with Yogurt (as we had no Sour Cream), this stuff was great. The Rice was a sort of porridge mess from all the stirring (and the higher heat on account of wanting to eat soon). But the flavour was all there.
I definitely would do this again.
