1 Cup Brown Sugar
¼ Cup Heavy Molasses
½ Cup Chopped Crystallized Ginger
10 rounded ½ teaspoons of Ground Ginger
5 rounded ½ teaspoons of Cinnamon
1 rounded ½ teaspoon of Nutmeg
1 Egg
3 Cups Flour
Baked at 350° for...
- 15 minutes
- Cut Discs
- 10 Minutes
- Re-Cut Discs
- Oven Off
- 15 Minutes
- Open Door
- 2 Hours
- Sit on Counter
- I do want these to dry out some more.

The Butter was icy cold and the Brown Sugar was as hard as a rock, so I added a few teaspoons of water and warmed the Butter, Molasses, Brown Sugar, and Crystallized Ginger in the oven... ever so slightly.
I'm only using half of the Ginger that I bought special for this, so I have enough to make another batch should things go horribly wrong. Otherwise, these are going out the door as part of Christmas.
The Spices (Ground Ginger, Cinnamon, and Nutmeg) got added to the goop while still warm. And then, I placed the lot in the refrigerator too cool off a bit prior to adding the Egg and mixing in the Flour.
I dumped the contents out (sort of spreading it out) into a baking pan... and set to cooking (per the previous breakdown).
My plan is to cut-out round discs with a glass cup while the dough is still warm.
Let's hope that works.
It did work.
And the cookies tasted great... nice and sharp.
{However, I should note that the Crystalline Ginger all but disappeared. It added flavour. Sure. But it did not maintain it's consistency throughout the aforementioned abuse.}
I'm repeating the recipe again... sort of... as close as I follow any recipe, adding Raisins, Cranberries, and maybe some Nuts.
Man, that Molasses goes straight to my head... straight from licked spoon to eagerly waiting brain.
The recipe is the same as above, except:
+ ½ Cup Raisins
+ ½ Cup Dried Cranberries
+ ½ Cup Sunflower Seeds
+ ½ Cup Pumpkin Seeds
+ One Egg (thus, two total)
- 1 Cup Flour (so, only two)
These were thicker, so I cooked at 350° for 45 minutes.
These last are a bit fluffier... or at least, that is my first impression, while still warm. They don't taste quite as sharp, either... which is no surprise given all the inclusions. But they are a bit healthier... if one wants to consider any sort of cookie a health food.
Neither of these was particularly hard on the teeth.
Next time, I might add a touch of Black Pepper or Lemon Zest.
All in all, they were tasty enough.
